The Kathiyawad region of Gujarat has long used Kathiyawadi Besan, a flavourful, gritty chickpea flour. It is made from ground yellow grammes and is high in fibre, protein, and important vitamins including folate and B6. The somewhat grainy texture of this besan is ideal for preparing regional specialities like khichdi, bhajiya, and gathiya. In order to obtain the proper texture, the soaked chickpeas are ground and then sieved. Usually, bulk bags, jars, and plastic pouches are used to package Kathiyawadi Besan. It gives energy, helps with digestion, and strengthens immunity. It is utilised in the food sector, particularly for snacks and ready-to-eat meals.
